What Is Freeze Drying And Why Is It Our Preferred Method Of Food Preservation?

Freeze drying is a method of preservation where food undergoes sub-zero freezing and then a drying process to remove moisture. Unlike other methods of food preservation, freeze drying does not shrink or toughen the food, and the food retains flavor, color and nutrition. Freeze dried food can be eaten in its freeze-dried state or reconstituted by simply adding a little water.
